Course overview

This course has been developed to give learners an understanding of the basic principles of food hygiene and infection control. Learners will look at ways of minimising infection through the use of handling and preparing food safely and ensuring infection control measures are used when necessary. This course contributes to the knowledge required for Care Certificate Standard 8 and fully covers Standard 15.
This course is delivered using a range of methods and resources including:
A-Z hygiene game, scenarios, case studies, group discussions, small group activities and DVD clips.

Course content

The importance of food safety in the preparation and handling of food
What is nutrition?
Understanding the role of nutrients, protein, carbohydrates, vitamins and other essentials on the body
Sign and symptoms of poor nutrition and hydration
Encouraging individuals to eat and drink in accordance with their plan of care
Ways that infection can get into the body, chain of infection and transmission
Effective hand hygiene
Personal protective clothing, equipment and procedures and how to use them
Dangerous substances
The principles of safe handling of infected or soiled linen and clinical waste

Learning outcomes

  • Explain the principles of hydration nutrition and food safety
  • Describe how to support individuals to have access to fluids in accordance with their plan of care
  • Explain how to support individuals to have access to food and nutrition in accordance with their plan of care
  • State legislation in relation infection control
  • Describe how to handle hazardous substances
  • State systems and procedures relating to the prevention and control of infections
  • Explain the importance of using personal protective equipment (PPE)
  • Explain the importance of good personal hygiene in the prevention and control of infections
  • Describe how to maintain a clean environment to prevent the spread of infection
  • Describe the principles and steps of the decontamination process
  • State the importance of good waste management practice
